Green Lemonade

Okay, so I am aware that I’ve already told you all about Green Lemonade but what can I say – I am a woman OBSESSED! This is also a great recipe to share on Friday (even for the second time!) because, in addition to being delicious, I think it would make a wonderful hangover cure. Or just a first breakfast. I’ve never been someone to go crazy for pancakes/ waffles etc (give me a muffin any day!) but this, followed by a Lemon Poppyseed muffin (buttered obviously!) and I’d be yours for life.

I’m definitely making that happen this Saturday!

 

 

This drink is also great because it’s so endlessly adaptable.

If you’re like my mum and have an aversion to sweet (no words), or like nutritionally minded Del Rashid and concerned about the sugar concetration, OR if you have tempermental blood sugar … you could very easily up the proportions of veggies and reduce those of apples. I’ve tried it with a bunch of kale, plus another bunch worth of stems, plus eight stalks of celery, two lemons and four apples. It was extremely sour, but still pretty good and my mum was a major fan. My favourite proportion however is one bunch of kale, six apples, two lemons and six celery stalks. That makes two GIANT servings. The key is to start with the veggie proportions below and add apples and lemon and additional kale to taste. Make sure you have up to seven apples, especially for kids.

You can also always dilute the drink with some water – fresh fizzy (carbonated) water is my favourite.

 

 

In another news, I had intended to post this recipe yesterday so I could post this delicious chicken dish Ive been obsessed with today. Unfortunately, I tried to photograph the chicken on the deck in the middle of the day (no easy task with a small dog I tell you!). The photos came out submerged in total darkness… riddle me THAT! Especially post photography workshop. Seriously, people… save me from myself! The upside is that I guess it just means I’ll have to make the delicious chicken again this weekend. Ce la vie.

Green Lemonade -

Serves 4, or 2 VERY generously (although it also depends how much kale you end up using and how many apples – see notes below)

Ingredients:

2 bunches of kale

7 apples

8 stalks of celery

2 lemons

Procedure:

Decide if you want to use the leaves from the kale as well, or just the stems. You don’t get much juice from the leaves but they do add a slightly better flavour. On the other hand if you save them you get to make kale chips – your choice! I vary my decision depending how much I’m craving kale chips.

Start with one bunch of kale OR stems from 2 bunches. Put in juicer and then add 4 apples, 1 a lemon and 4 stalks of celery. Juice!

Do a taste test! If it tastes sour to you add more apples (this will also increase the content most dramatically, since they provide the most juice..). If you want a more pronounced lemon taste add more lemon. The celery brightens up the juice and reduces the sweetness if you are finding that overpowering. The key is to play around with the proportions. My favourite proportion is one large bunch of kale, 8 celery stalks, 2 lemons and 6 apples – to make two GIANT servings.

*If you only have a vitamix you can use that but make sure you juice the lemons separately and then add to the mix. You will also finish with green applesauce, rather than juice, but it’s still deliciously refreshing eaten with a spoon! It may also work in a food processor, although I’ve get to try this..

Nutritional Information: Will vary tremendously according to the proportions of apples you use and how many you serve with it!
